Gérald Canet's 'Pièce montées' - Camlle's Cheval

Et voila! Here is the first of the three pieces montees that Gerald will create today.  As you see, it's for a little girl who loves horses.

The piece montee or croquembouche has a long history. It appears to have been invented by French pastry chef Antoine Careme (1783-1833) in the late 1700s, when it became very popular as a wedding cake. Many of the individual components such as the profiterole date to the 1500s, illustrating the long history of fine pastries in France.

Et voila! C'est la première des trois pièces montées que Gérald a créées le jour où j'y étais. Comme vous le voyez, c'est pour une petite fille qui aime les chevaux.   

La pièce montée ou croquembouche a une longue histoire. Il semble qu'elle ait  été inventée par le français Antoine Carême pâtissier (1783-1833) à la fin des années 1700, au moment où elle est devenue très à la mode comme gâteau de mariage.  La plupart des composants individuels comme  les  profiteroles datent des années 1500, illustrant la longue histoire de pâtisseries fines en France.
